Harvested and sorted by hand, cold pre-fermentation maceration for 48 hours and temperature-controlled alcoholic fermentation in stainless steel with gentle remontage and pigeage. 20 days of Post-ferment maceration in stainless steel tank in contact with the skins

Blend of wine aged for 16 months in new French oak (30%) and aged in stainless steel (70%)
